Mary's Cypriot Orange Semolina Cake | KALI OREXI

  • This beautiful Cypriot Orange Semolina Cake was originally shared by Mary (mum of @candlesbynikoletta) during our Meri Month of May in 2020. It is citrusy, nutty, moist and has a lovely sweet-bitter balance. It is perfect as a celebration cake, tea cake, Christmas cake and even a Vasilopita. I have baked it many times and have enjoyed it with and without the syrup drenching.
    In this version of the recipe I have used extra virgin olive oil. I have used a food processor to chop the almonds; blitz the oranges; and blitz the sugar with the EVOO and then the eggs (which I added altogether). I have also decorated the cake with syruped orange rounds and sugar-coated rosemary segments. Using the food processor for many steps in the recipe, was a super time saver.
    Here is the recipe:
    For the syrup
    • 1 ½ cups sugar
    • 1 ½ cups water
    • 5-6 thinly sliced orange rounds
    For the cake
    • 2 whole oranges  400-450g total weight
    • 1 cup EVOO
    • 1 cup caster sugar
    • 5 eggs
    • 1 ½ cups fine semolina
    • 1 cup natural almonds, finely chopped
    • 3 tsp baking powder
    Preparing the syrup
    o Combine the sugar, water and orange slices in a pot and bring them to a boil
    o Reduce to a simmer for 7 minutes
    o Take the syrup off the heat and allow it to cool completely
    Preparing the oranges
    o Wash 2 oranges and boil them whole until they feel soft when poked with a fork - approximately 45 minutes
    Preparing the cake with a food processor
    o Coarsely chop the almonds in a food processor and then add them to a large mixing bowl (TM Speed 6 for 6 seconds)
    o Add the sugar and EVOO to the food processor and mix till well blended (or Thermomix Speed 6 for 30 seconds)
    o Add all the eggs to the food processor (with the sugar and EVOO) and mix till well blended (or Thermomix Speed 6 for 30 seconds)
    o Add these to the mixing bowl and use a spatula to remove any remaining liquid from the food processor or Thermomix
    o Take the oranges and cut them into chunks. Remove any pips. Put the orange chunks into the food processor and blend them until finely chopped (for Thermomix - start on low speed and slowly increase to Speed 6 for 30 seconds)
    o Add the blended orange to the mixing bowl
    o Add the semolina and baking powder and mix well
    o Pour into round cake tin with its base lined with baking paper (20cm diameter)
    o Bake for 45-50 minutes at 180°C fan-forced, or until skewer comes out clean
    o While the cake is baking prepare the decorations - drain the syruped orange segments on a cake rack and dip 5-6 rosemary segments in the syrup and then dip them in the sugar
    o Allow the cake to rest in the cake pan for 10 minutes before running a butter knife between the cake and the tin and then turning it out onto a cake platter
    o Poke the top of the cake with a skewer, to create about 30 deep holes, so when the syrup is poured over the cake it is absorbed
    o Pour cool syrup slowly over the hot cake and allow the syrup to sink in. Some will drip down the sides and be absorbed from the bottom You can judge how much of the syrup is needed (I only had a small amount of syrup left over)
    o Decorate with the orange rounds and rosemary segments
