I have a friend with a serious gluten intolerance and I've had good experiences substituting masa harina for the wheat flour - this recipe looks like another one that trick will be good for. And it makes particular sense because both corn and pecans are native to the Americas! (Although I would wager this recipe would work well with walnuts, ground almonds, etc., too.)
These look great. I prefer chocolate in a pecan pie because, for me, it makes the pie seem less sweet. I prefer dark chocolate, but I definitely wouldn't say no to milk chocolate chips. Chocolate and pecans were made for each other. Not only looks good, but I'm sure it made your house smell great. Loved the look on Tom's face when Melissa complimented the bars. Y'all are great!

We made a pecan pie bar, no chocolate, for Thanksgiving and it was such a hit. You get the taste of the pecan pie in a smaller amount, leaving room for other desserts as well.

Good to see your blending fork. I have 3 different styles. You can not have too many. I have your cook book. I rewarded myself as soon as it came out. I spend money on cookbooks that I know I will use. 😂❤I am blessed to live in South Georgia and get as many pecans and peanuts as I need for free. This year I got 5 pounds of Elliott pecans and 3 pounds of some new that are wonderful. I just put in the freezer.

LOOKS DELICIOUS. I am gonna use maple syrup. Hope it works. No corn syrup. No chocolate. I like squares because some people cannot eat a whole slice of pie after a big meal.

you mentioned washing your hands well before getting them in the food ...real good advice.. I might add a tip I saw from a professional chef, to wit, before getting your hands in food you are preparing, remove rings as they will harbor bacteria... Try it, it will probably work out great to just half everything and use an 8x8” pan.

He never remove it. He explained why in a video awhile back. Sweet tradition for them.❤
Many people do not remove their rings, but rather wash their hands really well before and after.
