Ingredients:
Sixteen chicken wings
60g rock sugar
Three tablespoons of soy sauce
Half a tablespoon of dark soy sauce
A tablespoon of Shaoxing rice wine
A teaspoon of salt
Half teaspoon chicken powder
6 shallots, crushed
Six ginger, half an inch thick
Three bay leaves
Two star anise
900ml water
Coarse salt
Ice water

Basically take the wings out.. then just boil the sauce until it reduces at least half the amount and let it thicken. Medium heat is fine, because you don't want to burn the sauce.. since it has a lot of sugar and soy sauce in it

how do you long do you cook the sauce to make it thick. i boil it for 30 min and it still not thick do I need to add corn starch??

shimmerstars88 just hope you enjoy the cooking as much as I do , some of the ingredients in the translation may be a little confused for the English speaking , 3rd " light" soy sauce ( seasoning) , 4th "dark" soy sauce ( colouring), 5th any brand of Chinese cooking wine will do , 7th chicken "bouillon" or any time need translation , just text me , thanks !!

既然瑞士雞翼 都要攞老抽取顏色 點解唔用片糖而用冰糖呢?
Choy Kuen 冰糖煮完會爽啲, 片糖會有唔同口感, 而且甜味都有唔同, 前者清甜, 後者香濃。兩種都可以, 睇個人喜好而已😊
張媽媽咁如果嗰個鹵水汁可唔可以攞去整雞畀呢
Rosa Wong 你好!當然可以啦!但煑的時間要耐些,用小火煮約8至10分鐘,視乎雞陴大小而完,亦都是要關火㓎至滷水涼為止,因煑太耐肉質不嫩滑,可試試,多謝收看和支持😊

thihal123 There are a few different stories, but one of them says the waiter tried to pronounce "Sweet wings", but the westerner customer misheard and thought the waiter said "Swiss wings"... ha ha ha ha 😁
