If you don't want to use that much food colour, just make your own from rasberries(or other colour intensive red berries), just cook or process your rasberries until you have a thin sauce-y texture, sift out any seeds and reduce it down by cooking it until it is thick and dark. If you need that much colour and you want to substitute it completely, reduce it very much so that you don't add too much liquid to your batter. Best would be to use this AND a little food colouring so get the best result :)
After months of observation I was finally able to find out how to recognize an old episode of sorted food: Jamie looks completely lost throughout the video - probably because he hasn't yet found his purpose in life: annoying Ben, who hasn't found out that parmesan isn't vegetarian and sometimes likes his hair ridiculously spiky. Barry literally looks and acts exactly the same & mike looks like a teenager who desperately wants to get into a fight with his parents.
I've made blue velvet before. It was intense. I also found that the gel food colouring was better because it doesn't have the bitter taste of just regular liquid food colouring. So glad you guys made another video!
AAAAAAH JUST MADE THESE AND THEY TASTE LIKE HEAVEN!!! My best friend and I, just to add to the calorie intake, scooped out a bit of the middle of each cupcake when they came out of the oven and popped a piece of chocolate into each cavity, letting them melt before topping the cupcakes off with plenty of icing and a Haribo gummy heart each :) THANK YOU, saying how awesometastic you boys are just wouldn't do justice!
if you carefully cut a small circle hole into the top of the cupcake and hollow out some of the center (make sure to keep the top of what you cut out) its a nice twist to add some strawberry or raspberry jam and put the top back on before icing it (using the icing to cover the cut marks so you don't need to be as careful when cutting it) using the icing to hide what you have done can make it a tasty surprise because anyone you give them to wont be expecting some jam in the middle
The timing of this video could not be better! My brother's birthday is next week and I've promised him I'll make him a red velvet cake (even though I've never made one before ha!). How much longer would it take to bake if I just made it as a cake? Great video as always guys!
Sorry to hear that! It's the vinegar that helps to keep the red colour during cooking. Perhaps add a little extra? Different food colouring can give slightly different shades as well. Good quality colouring helps!
You should look into food colouring paste, you need the smallest amount compared to liquid and it doesn't effect the texture/taste of the food like liquid colouring can

Sagging in the middle is usually because they weren't left in the oven long enough, or the oven was at the wrong temperature. Using plain flour with baking powder is the way to make self raising flour :-D
just a tip idea: if you use an ice-cream scoop instead of 2 spoons, it makes it easier to put in the patty pans and makes them all the same size!!! PS the ones with the little scrapy thing to get it out are the best ones to use :) i really like your show too :)

I read somewhere that a Red Velvet cake gets it colour from the cocoa powder they used in the old days. The way they refined it, tinted it red. My family is allergic to red dye, so I usually use pureed beet juice. It doesn't change the flavour, but it does make it more moist.
Cocoa with buttermilk and vinegar was what people used before in order to make the cake red because the acids in those ingredients brought out the red pigments in cocoa. Now, even though we could just use red food colouring, it's already become a tradition to add that bit of cocoa in red velvet cake, so it kinda won't be the same without it. And it also helps with the deep red colour of the cake.
Sounds like they were taken out of the oven too soon, or did you open the oven whilst they were cooking? That can lose the temperature and cause them to sink?

You can use all purpose with baking powder. About 2 tsp baking powder per 150g of flour.

traditionally the dutch processed cocoa is the way forward... but not easy to find. Hopefully this method everyone can do!
You could leave it out but the butter helps it set, so yours would be thinner at room temp.
