- When you use mortar & pestle in grinding your herbs and spices, you don't lose the aroma. This manual process creates more depth when you make your sauce.
It is important to season a brand new mortar & pestle to get rid of all the dusty particles of the stone. You will only have to do this process once if you do it right. And the more you use this traditional kitchen tool, the more it will smoothen the inner surface of the stone.

Does Walgreens still use that in their logo? 😊 Anyway, it's a beautiful set you have! I have one for sweet and one for savory, and a molcajete. There is something so earthy and magical about them, right? In Arizona they are commonly found in the Latino markets. If someone has a World Imports in their area they may find them there as well.

I have watched several of these videos. I have never heard why the spices are ground as the last step. The purpose of grinding the rice is to wear off the loose bits of the stone and to smooth off the rough edges of the stone. But what does the spices being ground do that the rice did not?
