Chinese civilization has been around so long, through good times and bad times through prosperity and famine they don't waste anything and find ways to use it as food. Wasn't even very long ago up to the late the 1970's that even chicken wings was thrown out in the west like in the US and Canada. Today chicken wings are considered expensive finger foods in the west !
