Small correction for the Princess Shroob spirit battle. On top of Princess Shroob wearing a red-ish/pink-ish outfit, after going through some of Partners in Time Princess Shroob impersonates Princess Peach to most likely take over the present time by having her army sneak in through the time portals scattered throughout Peach's Castle. Although there's a funny error on the Smash Wiki. One of the listed inspirations for Antasma's spirit battle erroneously states that Dreamy Bowser is the combined form of Antasma and Bowser. This is false as Dreamy Bowser is created from Bowser inhaling the shards of the Dream Stone which possesses and enchances Bowser giving him the ability to create anything he can dream of in the real world.
Double Dash technically doesn’t have a standard kart model, though the Red/Green Fire and Toad/Toadette Kart have a similar look to the future Mario Kart DS standard kart.
Spirit or not I’m still glad they added some of the original characters from the first through paper Mario games, along side the other stuff from the modern paper Mario games

You know, this game has music from Street Fighter II, Mario & Luigi and Kingdom Hearts (with some of the Smash remixes being by Yoko Shimomura herself) and has a Final Fantasy rep but no FFXV music.

I have to say it is really awesome that you talked about the origins of these Spirit battles, although I'm wondering why it took like a whole month after the first episode which was much longer and full of way more information. Hopefully won't be too long of a wait for the next one.

So great to have this series back, it has been too long! Always great to hear the little details that I missed the first time when playing through the spirit battles. Still, the spirt fights were the ones were you got it and you could go "Aww that's nice I understood that reference"
The Grand Finale being the song for the final battle of Bowser's Inside Story in Mr L's spirit battle could also reference the final fight from Super Paper Mario.
For the Geno spirit battle, I took the liberty of noting the similarities between each fighters Final Smashes and their associated characters’ special moves.
Actually you forgot one Mario Kart spirit being the Master Cycle. Despite being a spirit that shows Link, the Master Cycle is a kart from the first DLC of Mario Kart 8 so in SSBU they included it as a spirit from the Mario Kart Series.

Well I gotchu with the resident evil spirits Leon's is a reference to the village survival, with villagers and fox (because fox has a gun and maybe because there is a character named leon in star fox) Wesker's is a reference to the final battle from RE5 in the volcano Chris is a reference to RE6 with the city background, Snake and Chris both have training and Richter resembles Piers Jill is a reference to RE1, fighting in a mansion with a slim female with a gun
My personal head canon for why the Biddybuggy spirit is so drawn to items is that in Mario Kart 8, sometimes I would be funny and item smuggle and the Biddybuggy was my cart of choice for it.
NGL with some spirits "updating" if you have certain DLC (Cuphead being one) I'd say that Broque Monsieur could instead have a yellow Kirby sucking up a 1HP Steve at the start to become cube kirby

Also the pink luigi might also be to reference the fact that in battle mario get's dreamy luigi's powers.
It was a missed opportunity to make Mallow be represented by Cloud, since Mallow is a living Cloud Unless Cloud’s Japanese name translates to something different (I’m not familiar with his series so I wouldn’t know), in which case it wouldn’t work in the Japanese version of the game. But if his name still was Cloud / the Japanese word for Cloud in the Japanese game, he really should have represented Mallow as a pun.
