There are other (better) Hokkien Mee stalls not mentioned - Lor 29 at East Coast Rd, Eng Ho at Blk 409 AMK, Ah Hock in Chomp Chomp and my own No.1 Hokkien Mee in Singapore, Chia Keng Hokkien Mee also in Chomp Chomp. For the uninitiated, Chia Keng Hokkien Mee is operated by the shifu/elder brother of Eng Ho.
Hainan ancestor and Hokkien ancestor are from the same place , center part of Yellow river , so some food are similar. Some Hokkien people also migrated to Hainan island , for example Hainan beef noodle was original from Hokkien ppls migrated to Hainan.
I would say that from the look it is the authentical 60s FRIED Hokkien Mee When I was 6-7 yrs old my father will wake me up to a packet of Opeh wrap FHM to bribe my mother at least 4-5 nights a week for his late night flirting it invade into my blood stream and now I’m 70 yrs old I’ve tried most of the FHMs in Sg so sad to say that all are adulterated with the nowadays liking version BLOATED WET N SOGGY During the 60s there was a stall behind Odeon Katong Theatre foods st 3 brothers are tending the business eventually they resettle to present Marine Parade market 2nd last stall near to the carpark in early 90s the uncle told me he will be going back to China n die there ever since no more there He told me lots of ppl are frying HM but very less are doing it a right way after frying garlic n eggs they dump Mee n Beehoon n Towgay together their timing to cook are one after another as fish n soya sauce with msg added stirred than those ppl will pour in lots of stock n lid the HM to SIMMER COOK making the FHM become bloated wet n soggy it’s becoming the NORM of today’s version It is so common to hear ppl requesting it to be WET alamak! In the old days thin beehoon were used nowadays ppl alter it to use thick beehoon where it is less porous absorbing are poorer doesn’t taste as good but the thick bh will yield more to the benefits of hawkers I would say if the word FRIED are not EMPHASISE than one day Fried Kuay Teow or Mee Goreng will be like Lor Mee n Mee Rebus In general I’ve tried them all I find 小弟 is the worst of the 5 compared

其實我記得從小 的時候 大概是40多年前吧 我吃的 每一攤 福建炒蝦麵 都是乾的 而且是自己炒的辣椒醬 不是 切的辣椒 用的是以細的米粉 不是現在的粗米粉.

两位🈶长辈超过七十岁吗?他们四十多年前🈶去过牛顿圈的小贩中心的吃福建虾面吗?那是最传统正宗的福建虾面。因为福建虾面是捕鱼虾渔民们在海上捕捉鱼🐟虾的时候,肚子饿的时候将现成捕捉到虾子和(苏东)鱿鱼、混🈴炒熟的面、因为船🚢上只有干米粉和黄面条、所以正宗的炒福建虾面只有虾和(苏东)没有其它的配料、年轻一代的新加坡人应该没有尝过了,哈哈哈!我小时候无意中跟随着长辈吃过好几回!永世难忘、因为已经失传了。牛顿圈装修过两三次了、老(安哥)正宗福建面已经一去不复返了😂😂😂!完全是海鲜汤汁包裹着米粉和面条🍜!哎哟喂!没有一根蔬菜哟喂、辣椒和酸柑橘😊绝妙配搭。在船🚢哪来的蔬菜豆芽葱蒜呢?
