I think that's incorrect as that is the pneumatic air system that uses an impeller to draw air through the hopper and pulls coffee form the loader but does not actually feed anything as the coffee lands in the hopper and can't go past the screen on top of the hopper lid
They probably account for expansion as they grind it. The gap may have been ground oversized to account for it. Though the expansion would be fractions of a millimeter so it may not matter for this application.
