  • This is how I like to smoke gammon for perfect results every time. I also talk through how to set up my Kamado Joe Big Joe for low and slow cooks. From loading the fire box & starting the fire through to adjusting the vents and dialling in the temperature to achieve perfect smoky results and a steady temperature throughout.

    Im new to kamado cooking, i have checked quite a few videos that show how to cook a piece of gammon. So far yours has been the best.

    Excellent british version of the using of kamado. All the good videos seem to be USA based and glad to see one in UK. Think you definatly bring a much needed personality to the whole field. Raw and traight forward.

    Very nice cook, I enjoyed watching that. What Lump Charcoal are you using? How do you store the Ham to keep for weeks and months, do you freeze it? Cheers

      Hi. I use Holm Oak charcoal. With regards the ham, I vacuum seal it then it'll keep in the fridge for a week, maybe longer. I also freeze some then take it out the freezer a few hours before using it. Tastes just as good!
