That mini bbq you had in Paco, Manila is called "Bopis". It's a deep fried marinated slices of beef lungs and heart.
This street food is inspired by a real ulam with the same name but they don't taste the same. The street food ones have a sweet peppery blend but the ulam one is salty and spicy.

for buko, you can have it straight just pure buko water with its white meat mixed..
or you can have it mixed with condensed milk or evaporated milk with some sugar to have a milky sweet flavor..
and lastly you can separate the buko meat, then add some condense milk, all purpose cream, some nata de coco, bits of melon, and you have a buko salad..
for the buko salad, i dont know if they sell that there but here in mindanao there are some local restaurants who sell it..

You are right, eating balut is a mindset. That's good👍 Balut is my favorite because I've been eating balut since I was a kid, may dad will always bring home balut (pasalubong) so I'm used of eating it.

If you dislike the balut because of the feather then you can try the penoy whis is no embryo inside just like boiled eggs but huge yolk, what makes the balut good is the vinegar sauce and there some people who makes vinegar sauce really good taste.
You are doing better, just continue with perseverance and one day you'll see your channel growing better. 👍
