Lucky for us we had spotted Jack Barnwell down by a fountain-it was so funny, we didn’t want to intrude on his conversation at the time and thought we’d missed our chance to talk to him.....about an hour later I was taking a pic of my friend Shelly and he photo bombed her! Our husbands laughed at us all day because we kept running into Jack and he was so sweet to us every time- it made our weekend. Hi Laura, We love carrot cake and I usually make it to take when we go to relatives at Easter. Being from Texas, pecans go both into the cake and frosting but no raisins or pineapple which I've also seen in recipes! I also now use 1/2 oil and 1/2 applesauce and we can never tell the difference. Parchment paper is a big help and I always double the frosting...hides multiple little mistakes. That all said, your cake looks delicious and loved seeing your mom, Benjamin and Russell. Cold and snowy here so I think I'm going to make your Tortilla Soup again...so good! Take care.
I agree with C Olsen. I used to have trouble with cakes sticking to pans and parchment paper has been a life saver. Try it, you won't be sorry. I remember making a carrot cake from scratch with my son who was 6 years old at the time, now he is 43 but he loved being in the kitchen with me. They are great memories.

I binge watched them 2 years ago during my maternity leave when I first found you and I find myself binge watching again now to ease my spring fever 😆 we have a little while yet here in Wisconsin though. Your comment "that right there, is satisfying", when you showed the egg collection and carrots is so true. There's definitely satisfaction in harvesting items we can grow/raise! These ingredients make everything taste so much better than store bought! You're so lucky you can garden at this time of year. I live in Manitoba, where our winters of minus 30 degrees celsius, which according to google is minus 22 Fahrenheit. Our ground freezes, so I don't think leaving root crops in would work for us. Yummmm!!! We just talked today at lunch time about finding a good carrot cake! You do so much organically, please consider switching to olive or avocado oil and eliminate the use of chemically processed canola oil. And also someone else’s comment on using half oil half applesauce is a great idea, particularly in a carrot cake...you will not taste the difference. Same carrot cake recipe I use but I add one more cup of carrots. Makes it even taste more carrotie. Cut a circle of wax paper to put in pan. Keeps cake from sticking!! Everybody says I make the best carrot cake ever! Looks like you do too! 🥕

Sure, they're productive but they're not pretty. Nowhere nearly as pretty as the flower beds and shrubs and plants she has. To each their own, I suppose.
Was inspired to make this with my MIL today! We had carrots from our garden too. Reduced the sugar 75% in the cake and used our own cream cheese icing recipe. It was delicious! Thanks for the great idea 😊😊

I'm no professional baker, but once you mix the dry ingredients with the wet the baking soda starts bubbling air, which gives your cake "lift". So perhaps while you were shredding the carrots and the batter was waiting, it lost some of its "loft." But who cares, it still looked (and tasted!) delicious! Hey Aaron! Laura could use that Kitchen Aid for stuff like this! Hint, hint: Valentine's Day is coming up!

We have a carrot cake recipe from a friend that is so wonderful, it was made into for my sister's fancy wedding cake. It is dark, heavy with carrots, nuts, spices and pineapple. Yum!

Hi Laura! This is another great cooking video. I'm not a big fan of carrot cake, but I'm thinking it's probably because I've never had a good one so will give this recipe a try. It looked delicious. The cake looked ok before, but really pretty after your Mom added the flowers and cabbage leaves. Others have asked, but would you please consider doing a video on edible flowers and, also, where you got your mixing bowls? I would like to have a set of stainless bowls, mine are all different. It was so much fun watching Russel, your Mom, Benjamin and seeing your Dad and Aaron in the background. Thank you so much for sharing your time and family with us! I love it when Russel plays in the shot! Have you ever thought of making sauerkraut from cabbage in your garden? My husband and I ferment our own and it’s absolutely delicious and RIDICULOUSLY good for your immune system, but this will be our first year trying to grow our own cabbage for it. Would love your input on that.
A cake looked great... makes me want to go make one.. yum yum... I heard you say your cake stuck to the bottom of the pan, if you put parchment paper at the bottom of your baking pan it will never stick to the bottom again.
Here’s a tip you can trace the bottom of your pans with parchment paper, cut then just butter your pan and place that sucker in and butter and flour again your cake will never get stuck again. 😁🍰
Oh Russell is so crazy, and that's a kitty for you, they can be little stinkers and that's just the way they roll, lol! And your carrot cake is so pretty, when you make homemade sometimes they turn out not so perfect, but that's the neat thing about real life and to me it looked just fine and so yummy, and I am so jealous that your weather is so amazing, all I see when I look around is giant mountains of snow in my yard from shoveling the walks. Same carrot cake recipe I use but I add one more cup of carrots. Makes it even taste more carrotie. Cut a circle of wax paper to put in pan. Keeps cake from sticking!! Everybody says I make the best carrot cake ever! Looks like you do too! 🥕

To avoid your cakes from sticking to the bottom of the pan, line with butter & parchment paper. Works like a charm!

If she did only vegetable garden videos, I'd unsubscribe. I'm here for the herbaceous annuals and perennials. I find vegetable garden videos boring. "Ooh, look: corn." "Oh, here's another tomato." Sure, they're productive but they're not pretty. Nowhere nearly as pretty as the flower beds and shrubs and plants she has. To each their own, I suppose.
Was inspired to make this with my MIL today! We had carrots from our garden too. Reduced the sugar 75% in the cake and used our own cream cheese icing recipe. It was delicious! Thanks for the great idea 😊😊

I'm no professional baker, but once you mix the dry ingredients with the wet the baking soda starts bubbling air, which gives your cake "lift". So perhaps while you were shredding the carrots and the batter was waiting, it lost some of its "loft." But who cares, it still looked (and tasted!) delicious! Hey Aaron! Laura could use that Kitchen Aid for stuff like this! Hint, hint: Valentine's Day is coming up!
Add 1/2 - 1 tsp ground ginger to the carrot cake. It makes a world of difference. And raisins. Cake looks yummy! Imperfect is perfect.

Oh honey, you used a pie tin with sloping sides🥧; that's why it appears it's caving in. Nevertheless, it was still beautiful and I'm sure it tasted delicious! The soup also looked scrummy! I will be trying both of these recipes. Thanks for inspiring me to get back into the garden AND kitchen!

Looks delicious! I’m a cake baker, and parchment circles are my best friends when I’m baking layers. I cut my own from the roll - quick, easy, and cheap! The consistency of your frosting looked like spreading perfection. 😋

We have a carrot cake recipe from a friend that is so wonderful, it was made into for my sister's fancy wedding cake. It is dark, heavy with carrots, nuts, spices and pineapple. Yum!

Hi Laura! This is another great cooking video. I'm not a big fan of carrot cake, but I'm thinking it's probably because I've never had a good one so will give this recipe a try. It looked delicious. The cake looked ok before, but really pretty after your Mom added the flowers and cabbage leaves. Others have asked, but would you please consider doing a video on edible flowers and, also, where you got your mixing bowls? I would like to have a set of stainless bowls, mine are all different. It was so much fun watching Russel, your Mom, Benjamin and seeing your Dad and Aaron in the background. Thank you so much for sharing your time and family with us! And, I only like raisins baked in cinnamon rolls and raisin bread.
I love it when Russel plays in the shot! Have you ever thought of making sauerkraut from cabbage in your garden? My husband and I ferment our own and it’s absolutely delicious and RIDICULOUSLY good for your immune system, but this will be our first year trying to grow our own cabbage for it. Would love your input on that.

I heard you say your cake stuck to the bottom of the pan, if you put parchment paper at the bottom of your baking pan it will never stick to the bottom again.
Here’s a tip you can trace the bottom of your pans with parchment paper, cut then just butter your pan and place that sucker in and butter and flour again your cake will never get stuck again. 😁🍰
Oh Russell is so crazy, and that's a kitty for you, they can be little stinkers and that's just the way they roll, lol! And your carrot cake is so pretty, when you make homemade sometimes they turn out not so perfect, but that's the neat thing about real life and to me it looked just fine and so yummy, and I am so jealous that your weather is so amazing, all I see when I look around is giant mountains of snow in my yard from shoveling the walks. I am so ready for warmer weather it is cold and yucky in Idaho. Every Time We Have A Potluck. That's when my presentation skills go down the hole. It looked super yummy though and fresh eggs make the best desserts. I hear fresh duck eggs are even better for baking but I haven't tried it yet. Maybe this summer.
