I have made Frittata's with Sweet Potatoes, they cook amazingly easy, tasty, and can be so filling! I use many different herbs, spices to change it up. Curry, Italian Herb Mix, Oregano, Garlic, etc. I use a glass lid to cook without flipping, also add cheese & Spinach on top. It all works extremely well, serve with Salsa, Plain High Fat Greek Yogurt, Sliced Avocado, fresh tomatoes sliced! Truly a Vegetarian Entree~! Ole! Thank you for a Great Recipe, Gracias!

Me too - I actually wish Albert would say more in Spanish in his videos, he has a lovely speaking voice and his pronunciation is elegant. (I actually understand more Italian than Spanish, but both languages sound beautiful.)

Ditto on both your remarks. It does look nice, but I cannot get my head around the basic incompatibility in the palate of sweet potatoes and eggs. I do like to confound my expectations, though, so may try it -- but with a lot more seasoning than this -- something green (chives or parsley), and a dash of cayenne.
I am thinking of adding curry powder - not traditional Spanish but neither is this version. Will try it both ways. I have people lining up when I make a proper tortilla.

I wonder how that would work with low carb butternut squash ?
I might be wary of squash as it has a little bit higher water content.?
Good point. I think dicing it and baking it uncovered until tender should help with the moisture. I hope so, at least, since that is what I have on hand to use.
Our sweet potatoes are white on the inside. Also wonder if they will cook in the pan. We normally pressure cook it before eating them

Why do you take the potato from the pan and add it to the egg mix? I just add the egg straight to the pan and it turns out great.
When you are leaving so much oil before pouring in the egg on hot pan, whats the point of having NON-STICK pan?
It looks very good. I am surprised there is no garlic.

Why to Mach oil
Oh boy, Albert, you scared me with the "got sweet potatoes" bit: Recipes I will never look at, let alone make, are those whose youtube titles include: if you have _______, then make _____. Also, never before have I ever had such delicious ______. Same poster often says this for multiple recipes for the same ingredient, meaning clearly most are a lie (or at least hyperbole). You are too good for this uncreative rhetoric!
Tesco will shoot you for making this delicious food and not buying inflated garbage from them.
