For which technique? For the Avocado plants grown in water, you just need to make sure you keep the roots fully covered in water. For the Avocado plant that is potted - water when top layer of Soil is dry.
I have not tried growing full size plants with just pebbles and water, only rooted cuttings or the avocado seeds. But that is a great idea to try! Please do let me know if you try it out and how it works for you.

It's completely up to you and your preference! I am using polished pebbles that are approximately 1/2" in diameter - link is in the video description. But you can use larger, smaller, unpolished, found rocks, etc. If you are adding pebbles to similar sized vessels as the ones I am using in the video (drinking glass, 4" plant pot, and 6" diameter tray), I would not use any pebbles that are much larger than an 1" or they just won't fit.
