I know where they filmed the Gaston sequence. About two or three miles south of Salem OR there is a small theme park called Enchanted Forest. They filmed it in the Old World Village, known by the public as the English Village. In fact I have a poster map from the park and on it I can see exactly where they filmed the part where they pan up to the tower at the end of the sequence.
