Those look terrific! I usually add 1/4 cup of sour cream to the cream cheese, makes the mixing and spreading a lot easier! Love the chorizo addition, going to give that a shot
Could you prep these like a day or two in advance? Did a handful of home made poppers the other day for the first time after watching this helpful video. Went with a chive cream cheese. But I got a 4th party coming, just wondering how these bad boys withstand a day or so prepped in a fridge.
My coworkers & I use dove/quail breasts w/cream cheese. For my family, I substitute baby bell peppers for the jalapeños. I use my local bbq restaurant's rub & drizzle a tiny bit of their sauce. Magnifico!

Love poppers! Chorizo is definitely a great improvement to the cream cheese. Leftover manwich and mac and cheese mixed is a favorite filling here.

I’ve prepped them the day before and coked them the next day with no issues. Saves on being rushed 👍

Make ahead and freeze. This way the bacon cooks first since it’s on the outside and gets crisper. No thawing necessary.

Hi there! Do you have a tray underneath for the drippings? Just worried all of that grease will drip in the fire. Was that an issue?
It’s done indirect so any drippings don’t fall directly on the coals.
I add shredded "Oaxaca" cheese to the cream cheese, its our version of Mexican mozzarella, makes it really cheesy and adds some saltiness to it too.

How do you avoid your grill catching fire from the bacon grease?
They are grilled indirect so the flame isn’t directly beneath them. Some people do a short direct grill at the end.

Turn the fire up at the end and share that bacon. It'll leave a little crisp to the jalapeno. But you won't have chewing bacon fat to deal with
Glaze the poppers with maple syrup
