I'm super late but like many people have said: canola is a high heat oil and good for high temp frying, deep frying, and is also a neutral oil (no distinct flavor of its own) olive is a med heat oil and can be used med temp frying, it also has its own distinct flavor and can be used as a topping (mostly commonly in Italian food) sesame oil is a finishing oil, and shouldn't be used for cooking in most applications as it loses flavor and can burn nutmeg goes great on alfredo and if you're making a dish often because you like it, you should buy invest in the ingredients

As someone that cooks a lot, NLs take on oil was quite frustrating for me. Olive oil is for Italian food. Coconut oil is for desserts, or sometimes Thai food. Canola oil is a good tasteless oil. You use it when you need to grease a pan or baking tray, but you don’t want any weird taste left over. I respect so many of NLs food opinions, but living your life using only one type of oil is just setting yourself up for failure.

Northern Lion is just wrong about the oil, you need two types of oil - a neutral, high smoke-point oil (avacado oil is great, or other veggie oils), and olive oil.
I will heartily disagree about the "won't taste a pinch of nutmeg" thing. You may not taste a nutmeg taste, but you will notice a difference between the recipe with and without it. I do agree that its the wrong spice to start with; but if the recipe calls, then it calls. I recently started dating a lady who is an absolute sorcerer with spices. There is an ocean of difference between no spice and the right amount, just not the one you usually expect.

Why are they so anti-nutmeg? Just because he's going to have the container of nutmeg forever doesn't mean he doesn't need it for his recipes. According to their argument nobody should ever buy nutmeg because it's used so sparingly.

Northern Lion is just wrong about the oil, you need two types of oil - a neutral, high smoke-point oil (avacado oil is great, or other veggie oils), and olive oil.
Fresh, high quality olive oil doesn't even last for months. Olio Nuovo is intended to be used within weeks
Olive oil is high smoke point tho. Extra virgin is not.

I will heartily disagree about the "won't taste a pinch of nutmeg" thing. You may not taste a nutmeg taste, but you will notice a difference between the recipe with and without it. I do agree that its the wrong spice to start with; but if the recipe calls, then it calls.
I recently started dating a lady who is an absolute sorcerer with spices. There is an ocean of difference between no spice and the right amount, just not the one you usually expect.

First off, I'm with Apollo. Secondly, I don't get the nutmeg hate in general. I mean, mashed potatoes without nutmeg is just bland tasteless paste.
If austin is just starting out cooking then yah he doesnt need nutmeg. The subtleties it adds to something like alfredo is not gonna be noticed by someone whos dulled their taste buds with fast food and frozen garbage for years.
