I've been to the bakery as part of my culinary training (I'm a chef by trade, and something of an amateur baker), and have tasted their products. The cakes are quite good, and I love their lobster tails. I will say that their pound cake can sometimes be a little dry, but that's mostly because to make sculpture cakes that stable, you have to let the cake itself rest for a day or so to let it firm up so it can be carved and shaped. If you use the right type of filling/icing, it can offset any dryness. That's why Buddy and his team use so much buttercream/mousse style fillings - they can be moistening, yet will not cause the cakes to collapse. Its also a main reason why Buddy uses so much rice krispy treats when sculpting shapes for the cakes - they're stable and edible. And a lot of people complain about how they use so much fondant and modeling chocolate - they use them because those two types of icing/coverings won't melt easily, so can help maintain the cakes during transport and display. Sorry if this seems like a rant, but I see so many comments on other vids complaining about that left and right...as a fellow baker, it irritates me...

Grime it physically isn't possible to make those sculptures without those rice krispie treats. As long as they make the amount of cake requested by the customer, it doesn't matter that they use Rice Krispies. And the show exists cause he makes cool looking desserts. The focus is on the looks. Not the fact that they used rice Krispies.
