I made this for mother's day this year and it was a huge hit. I didn't do it exactly the way you did it because I didn't have time to make fondant (I know I know fondant takes like 10 minutes to make) but I wanted the other details to be perfect. Instead of coffee buttercream I did a regular buttercream border and a little smear of extra buttercream across the layer with crushed oreos between each layer. My mom loved it.

I haven't seen a cake like that before, most flower pot cakes have the flowers that are edible and the pot is well...just a pot and a styrofoam ball. I think for the potting soil you could sit up some white chocolate also and put it in the crumbs for the more potting soil look but I can't wait to try and make this cake

She used simple syrup: 1 part sugar 1 part water boiled and then cooled. It keeps the cake moist.
