  • Lemon Crinkle Cookies Recipe
    160g granulated sugar
    Zest of 1 lemon
    110g unsalted butter(melted)
    2 large eggs at room temperature
    1tsp vanilla extract
    Pinch of salt
    Juice of 1 lemon
    280g all-purpose flour
    100g iced sugar
    ½tsp baking soda
    Direction
    In a large bowl mix together sugar and lemon zest. For extra flavor, rub them together with your fingers until the mixture feels like wet sand. Whisk in the melted butter, eggs, lemon juice, and vanilla until well combined. Then add flour and baking soda and mix until combined. Cover and refrigerate for at least 3 hours or overnight.
    Preheat the oven to 350°F/180°C. Line the baking sheet with parchment paper. Scoop the chilled cookie dough into balls (approximately 35g each). Coat each dough ball with the icing sugar and place 1 ½ inches(4cm)apart on a lined baking sheet.
    Bake for 12 to 14 minutes. Let cool and enjoy.
