A scenario where one little change, one little *glitch* changed everything.
The damage dealt to Gaster changed so he died. Sans as a result probably put more into his Special Attack then he did in normal Glitchtale (not that it had any effect), and as a result couldn't summon a partial Gaster Blaster in time to block the strike.
Frisk, likely shook from the deaths of Gaster and Sans, wasn't able to muster up enough Determination to summon a shield in time, although apparently enough to refill their soul.
The rest from there needs no explaining...
