ERNIE BAKES: Bread & Butter Pudding Secret Recipe

  • • A secret which is no more a secret. We had many friends and relatives requesting this recipe every time theres a potluck at someone's home. Here it is. And stop asking us for the recipe :)
    Bread and Butter Pudding
    INGREDIENTS
    (Serves 3-5)
    120g sandwich bread (Cut into triangle shape)
    10g raisins
    50g melted butter
    Bread sauce, to mix together
    300g fresh milk
    75g cream (Topping Cream)
    75g castor sugar
    150g whole eggs
    5g vanilla essence
    For garnishing to boil
    50g apricot el
    30g water
    Vanilla Sauce to boil
    285g fresh milk
    35g dairy cream
    55g castor sugar
    drops of vanilla essence
    Ingredients to mix
    15g custard powder
    50g fresh milk
    Method
    • Arrange a layer of bread in an aluminium container (15 x7.5cm)
    • Sprinkle raisins on the first layer of bread.
    • Arrange another layer of bread on top.
    • Pour melted butter onto the bread.
    • Mix well the bread sauce - fresh milk, cream, castor sugar, eggs and vanilla essence and pour it onto the bread until almost brim of the container.
    • Put the mixture to a rest for 1 hour.
    • Bake it at 120 degree Celsius for approximately 2 hours. Take it out from the oven.
    • Boil the apricot gel and water together and this acts as varnishing - to brush on top of the bread & pudding once it is baked and ready.
    For the *vanilla sauce: Mix fresh milk, cream, sugar together and bring it to boil. Add a few drops of vanilla essence.
    • Stir custard powder and fresh milk together until the powder is dissolved.
    • Mix the above two mixture* together until the powder is dissolved.
    Stir slowly to combine the mixture.
