I just stumbled across your channel and boy am I glad I did! Pecan pie is my absolute favorite pie. After watching your video I checked my kitchen and I had all of the ingredients but not the right size pan. I decided to double the recipe for my 6 inch cake pan. I followed your recipe but used light Karo syrup (as you said could be substituted) instead of maple. It was super easy and quick to make. It baked perfectly in 30 minutes. It actually cooled fairly quickly since it is small. I scooped out half the ‘pie’ and thoroughly enjoyed every single bite! The crust wasn’t missed at all! Thank you so much for taking the time to pare down a full recipe. Your lemon bars and Texas sheet cake are next on my list!
I accidentally clicked on this video, I do not regret it an I am Glad that I did, I love Pecan Pie, You can also add, a spicy touch, for some oomph by mixing it with Cayenne pepper and chilly flakes, greetings from Mexico,
Maple syrup has lots of water, I'd recommend you try Golden syrup it imparts a richer flavor, and reduces the cooking time a little bit if you're used to using corn syrup. I also started adding butterscotch morsels about 30 years ago, wow what a difference. If you are a pecan lover, fill your form/crust half full of chopped pecans, or a mixture of morsels & pecans, then add your custard filling and finally a decorative layer of pecan halves. This saves $ and makes the pie more attractive. Have even converted non-pecan lovers to enjoying my version of butter-pecan pie. (the butterscotch version)
Last year I subbed sorghum syrup from here in Tennessee which made it almost like molasses. There’s also tapioca syrup and rice syrup. I became allergic to corn in my fifties (around the time it went gmo).

My local grocery store sells "individual" pie slices but they're ridiculously expensive! Soooo much more economical to create small portions for yourself at home - *and* you can control the quality of ingredients!

Have you ever use rice syrup much? I wonder if it would be too thick. I can't chew whole nuts and I do a lot with grinding nuts and making nut butters. I'm going to try making sort of a pie using your filling ingredients and mixing them with my nut butter. It won't be like a real pecan pie, but I will enjoy it a great deal! I actually just went to the store and bought too many nuts and now I'm afraid they'll go bad before I use them! And I LOVE Pie crust, but I'm gluten free. I've got GF pie crust recipes, so I'll have to see what I can do.

Dumb question if i made some crust and put it in the bottom of a ramekin then added this filling on top will it turn out ok? Im not a baker but having crust is part of having pie. I dont want just the guts. I want crust and guts. Lol.
Pie is ALL ABout the CRUST!!!! Fillings can change but a GOOD delicious crust RULES! I despise key lime, marange, and cheesecakes-texture and flavor ick. Gimme a great cobbler crust, pie crust!!!
@@thiaco6203 Actually True Key Lime started out with a crust, Not graham (lazy way out) crust, which does change the flavors, and very important textures of pie, I love a shortbread crust for both my pecan and Key Lime pies, give it a try, bet you'll agree!!! Don't settle for what that "easy" crust does to a great pie!!! If I can do it, certianly you can do it!!!

People don't like corn syrup because they assume it's synonymous with the high fructose type but it isn't. I'm going to try using Keto sweeteners as substitutes.
Did you try it yet? Please let us know how it turns out. I'm curious about how the chemistry of the keto sweeteners respond (and which ones you're using) since many of them do not crystalize the same as sugar or syrup.

There's a channel called CJsKetoKitchen with a keto pecan pie version from a little over four years ago that looks good, and there's a recipe link in the description box I'll consult for my future attempts.

I make a really good, flakey butter crust. I never liked crust until I made my own.
I agree. A good flaky crust offsets the super sweet filling.
The crust needs to complement the filling, and not just be a vessel for the filling.

The crust is very much an important part of pecan pie. Leaving it out is just eating a dish of pie filling.
