This is a great recipe but I have worked at a chinese restaurant, there they do it slightly differently. Every chinese restaurant has a massive stock of chicken stock/broth always ready. Instead of adding sauces directly to the wok like in 6:27, what they do is take a quick bowl and put all the sauces in it, and mix chicken stock and wisk the sauce and stock mixture properly until the liquid is uniform. Then they add it to the wok. For the recipe I am sharing, cornflour isnt required that much, maybe one teaspoon if it is still too runny. right after adding the sauce mix to the wok, you must add green chillies in slightly more amount than the heat you like to handle. and let the sauce boil . Remember the consistency should be sweet corn soup thick, at this stage you can put in a nice spoonful of sugar. The rest is just like how Sonia Barton has done. If you want the restaurant style ajinomoto type taste then dont skip using good chicken stock, it makes a big difference. another pro tip is dont use kadhai or wok if cooking at home, our home burners are not as strong as chinese restaurant kitchen ones, use something with a flat bottom the sauce will easily thicken up.
