I typically like to cook poultry hotter and faster. So cooking at 350-400 degrees will let the skin crisp up. I know when I cook at lower temps sometimes the moisture tends to soften the skin.

Try butter under and over the skin and some say baste it throughout the cook.

What flavor of pellets did you use.
I like using mesquite pellets and will use apple for poultry.

8 Turkeys! I wish I had room to cook that many turkeys!
