- If you love Tiramisu.. you need to try these cookies! We're making these thick Tiramisu chocolate chip cookies loaded full of lady fingers, milk and dark chocolate, topped with a creamy Mascarpone Icing. No chilling needed!
Recipe (Makes 8 Big cookies) Double the recipe for more!
Preheat Oven to 160°C Fan Forced (180°C Conventional)
Cookie Recipe:
115g Unsalted Butter
120g Brown Sugar
70g White Sugar
1 Egg (Cold)
1 tsp Vanilla Essence
2 tbsp Espresso (Or 1 Tbsp Instant Coffee)
275g AP Flour (245g if using Instant coffee)
1 tbsp Cornflour
1/2 tsp Salt
1/2 tsp Bicarb Soda
1/2 tsp Baking Powder
150g Milk Chocolate
150g Dark Chocolate
80g Lady Fingers
Mascarpone Icing
270g Mascarpone
1.5 tsp Vanilla extract:
135g Confectioners' sugar
1 tsp Honey
180g Heavy cream
1 tablespoon cocoa powder for dusting

I'll be trying it out this week and let you know how it turns out! My Tiramisu is pretty darn good. My cookies are darn good too. So I'm really hoping the result will intensely good.
Ok, So I made these twice already and here's my feedback: I made them per your instructions and they turned out just like yours did, and they tasted good! However, it didn't really taste like Tiramisu. They were lacking a heavier coffee flavor. So the next day, I soaked the lady fingers in a little bit of coffee. When folding into the mixture, the batter got pretty moist. But after setting in the refrigerator for a few hours, they hardened up nice. But while baking, then they really spread! I put too many on the pan and after spreading, they all melded together. But despite the setback, this batch still tasted better than the first! Definitely more coffee flavor, tasting more like Tiramisu. Next time, I'm going to try dousing the lady finger croutons in coffee and then freezing them before folding them into the batter, and see what kind of results that gives me. Thanks again!!

@@sofialuu8162 Oh! No I haven't yet. I've been making cookies like crazy the past month. A lot of S'mores and other Choc. Chip variations. But I think i'll try it again one day.
