It's the yeast that make the bread so puffy. Using Backing soda result in different consistency. Backing soda can make the dough almost instantly , while using yeast you have to wait some time for fermentation in order to rise the dough. Using backing soda the dough never rise as much as using yeast. Yeast can change the taste and composition of the dough while backing soda doesn't. If you look at the Nan-Bread or tortilas then look at the traditional bread you'll be able to see the differences and consistency.

На 200 мл.молока три ложки сахара,это уже не хлеб,а булочки.
Я вообще готовлю без муки и без дрожжей. Посмотрите канал venera love. Диету не меняла ,поменяла только хлеб и да уже 6 кг сбросила😊❤
