The taste of unions caramelized with a wee bit of sugar is the way to go... Amazing difference! don't need a lot. In Sweden we do union (gravy) with bacon and a sprinkle of sugar on the unions is what makes the dish.
No one I know uses green bell peppers . The best cheese steak is at the White House in AC NJ they use Formica rolls . They’ve had plenty of movie stars eat their cheese steaks with pictures of them eating there . That bread is what makes any sandwich taste great , thats why all the sub shops around the shore area and inland too use AC rolls .

Look, I get that Gino's and Pat's won't use bell pepper (I personally like Pat's better), but that doesn't mean it is not a Philly cheesesteak. Funny enough, the best Philly cheesesteaks I have ever had HAD Caribbean Red hots and red bell pepper in them.....using New York strip instead of ribeye and white American cheese. Also, you can absolutely get bell pepper on a Philly IN Philly. Now, Chicago Deep Dish? Can only be had IN Chicago.....

Made it yesterday added mushrooms and red peppers. Hoagie bread toasted to perfection then ingredients added 👌 umm tasty.

I use Sara Lee Angus Medium roast beef (Walmart) and onion. I have the RB cut on 1 and thin slice the onion. I use a Hoagie roll and Provolone cheese.
