Actually no. After deleting profile iOS 15 is literally still on your phone even after resetting it. I even erased all my data , basically starting my phone as new and used an old back up of mines that was backed up before i downloaded the beta iOS15. After restoring it still said iOS15.

if you still have the backup, change it back to ios15 and go into the beta for a hot minute to back up your photos using something like google photos yes it requires you to enter ios15 beta again but you'll be able to recover your photos

iTunes will use the C drive for restore, so you only need to clear some extra space there.
