Today is Friday , and my mumma has made the same dish shalgam gosht with the very same recipe but she skipped 1_2 step like , frying shalgam adding butter ... Even my grandmother "a great cook" also use to make shalgam gosht.Shalgam was straight from our garden, though as a kid I never liked it. Will definitely like to try it again.
Bhai Sahab ...tussee Chaa gaye ho ... We are Kashmiri abd we eat this as well . We ate it last night and as we Kashmiries stayed in Punjab for 80 years before partition many punjabis. Also love this this ..and yes we also call it Shab degh . Only difference is that according to real recipe we put gurh /jaggery as well. Now days we are using simple sugar. The flavours of gaminess of mutton or lamp with bitterness of turnips along with salt and sugar is the special 'monopoly' of this recipe .Still i loved it you are keeping our heritage alive . Also i did enjoyed your Rogan Josh recipe.
Tried it a few times when I used to live in Patel Nagar, Delhi. There was a locality nearby named Shadipur and around the local mosque there was a whole street filled with non veg restaurants. I was wondering if I could ever taste that again now that I'm back in Lucknow. Thank you so much sirji.

Sir its a ritual to make shalgam ghosht as my inlaws are from rudauli near faizabad. And the shaljam leaves have a unique and outstanding taste which I have never experienced staying in Lucknow so far. Great recipe I have learnt from the inlaws. Co incidence, my dad bought salgam this Wednesday and he says, it tastes good with chicken, i was surprised so i asked him if it's a dish, and he said, they used to make it when my dad was a kid cos they used to grow salgam ! My mother told me only yesterday that she made this dish (in Rawalpindi). I remember this dish being made at my nani's house all through my childhood and up until I was there. My nani and mumani used to make it frequently. I made the connection only now after listening to you in this video - my maternal family is from Kashmir - hence the reason for making shalgam gosht soooo frequently. I never liked it though. But maybe because nobody handled shalgam the way you did in this video / recipe. THANK YOU for such great and grand service you are doing to our food and the love that you show for each ingredient 🥰

Chef .... In Bangladesh its a delicious food . we used beef normally. We used simple and lite mosla to cook it. Like just for gosht mosla . Shalgom just fry on oil and put in gosht. Its flavour just awesome ❤️ Thankyou for this new recipe . I will must try .

Otherwise, mutton with drumsticks or gongura is also popular. Though gongura maamsam (mutton) is highly rated, the seasonal ones are our family's favourite.
