Corn Canning---Better Late Than Never...Vlog 122

  • We canned corn in August so yes, this vlog is a little late but I still wanted to upload it especially since so many of you are interested in our canning method and I do show that in this vlog.

    FREEZER CREAM-STYLE CORN
    13 qt. water
    6 c. sugar
    12 Tbsp. salt
    38 qt. raw corn
    Mix first 3 ingredients; boil, then add the raw corn. Cook for 20 minutes. Cool. Fill containers with the cooked mixture and corn. Make sure that they are fully cooled, then freeze.

    It is nice to see the whole colony shucking and husking together. Since you and your mother herbalist did not save the silks or tassels for tea? You save what has not been browned in the silks. it helps to Improve urinary tract infections (UTIs). People who practice traditional Native American and Chinese medicine sometimes use corn silk tea to treat urinary tract infections (UTIs).
    Act as a diuretic. For women with swelling in the legs, it is a great help. Improve angina.

    I just love how the community comes together, which is something that has become lost over the centuries to most of us.. Society seems to have become the me me culture and not helping each other. Mark's comment was wonderful.

    Growing up, we had neighbors who canned corn. However, we blanched the corn, cut it off the cob and froze it. No additional preservatives were needed. We did the same thing with peas. With a large family, it was a team effort.

    My mom and I make freezer corn every year and I think shucking, cutting, cooking, and bagging up 120 ears of corn is a tough job... can't imagine making enough for a colony. It's not easy and corn juice is so sticky, you feel like it soaks into your body by the time you're done. We used to always cut our corn off raw, but this year we tried parboiling the ears and then I cut it off. It was so much easier. Everybody who makes canned or freezer corn has their own method of making it, it's whatever method works best for those involved at the time.

    I'm a new subscriber and I must say your content speaks to my heart for many reasons. My Grandma, Mother and I all process creamed corn but we make it very differently. I miss the days when we children would sit with my grandparents aka Nanny and Papa and would shuck bushels and bushels of peas, beans of all kinds and of course corn. Then we would spend the next few days processing this harvest by canning or freezing. Hard work but worth the effort.

      and sometimes it's too small but really only when we are canning stringbeans we need over 300 jars. I hope you have a blessed week as well 🙂

    That was very interesting, the corn was so beautiful looking! It is a labor of love canning all of the corn. It would be a big time saver having all the large steaming tables for the jars. Thank you for sharing your harvest with us ❤

    You can your corn the same as us. Unless we have used our jars for something else. We will also freeze the corn after it has cooked. Thank you Giselle, please say hello to your family.

    I did can corn in the past, now it is eaten fresh only...kids are out on their own so our corn patch is very small. Good to see the community all out helping and getting the task accomplished. Thank you for the video and it's okay if it is a tad late...we don't care! Autumn is here and the leaves are starting to turn their beautiful golds, reds, and browns. I love the Autumn...it smells so good outdoors too! Have a great week and stay well❣️❣️

    A very interesting vlog. I have sweet corn frozen in bags from the supermarket or in tin cans. NYFarm girls grow some to pick and sell by the road or at their pumpkin patch. Veggie boys pick some to sell in their shop. Neither of these You Tube publishers process themselves. In the UK, all the sweet corn is highly mechanised, my brother in law did grow some in the garden once, but we need good conditions look ate in the season and it often gets too cold and wet here. Thanks for sharing.

    Thanks for sharing your life again Giselle. I'm living in Georgia (the country not the US state). They do grow corn here. But they have no sweet corn. It is mostly like a smaller version of hominy, with a chewier texture. I think one of the most important aspects of your channel is showing us simple reality in an age where too much has become abstract and strange to the average person. Thanks again. May God keep meaning flowing through your life.

      @@gisellewaldner9406 Hominy is a large species of white corn, at least twice the size, that is eaten more in the American South. It is often dried and crushed and made into a porridge or a mashed potato-like side dish for breakfasts. It's actually quite tasty, It's sold in boxes or cans.

    Did you know there is one corn silk for each niblet? ….. just a weird corn funny fact . I cook my corn cobs first before canning, have tried several ways and cook then cut off gently. I like that less niblets get damaged. The best tasting is roasting in the oven in the husk, other great ways are microwaving in the husk and roasting in husk in a very very hot wood fueled outdoor pizza oven. I love the roasted corn taste when its canned with heavy dose of sugar and a splash of vinegar. Love, love, love homemade canned corn. For fun and color add peppers of any color and or pickles or onions, celery …well shoot any vegetable you love.

    I have been to Romania and there they eat the corn of the stock and dry the stock and use it for firewood in the winter time!!!

    I love your food and canning Vlogs. Thank you for this. In August, I canned cranberry apple compote and strawberry rhubarb pie filling. The cranberries were in my freezer from the fall of last year so I decided I needed to get them canned. I water bath and pressure can.

    I loved this vlog! The community picking and husking the corn together made me think of the saying “Many hands make light work.” 😊It also reminded me of when I used to help husk corn and sometimes there’d be worms in them. Yuck! Your communities corn looks so good!! Also, it was interesting watching all the ways you preserve the corn. Question - do you make use of the corn cobs after slicing off the corn? Apparently you can use the cobs to make broth. I’m sure there must be other uses - composting, feeding pigs or chickens? Canning the way your community does looks much more enjoyable than canning by myself. 😄 ❤️

    Dear Giselle, what a sight, all that beautiful corn. I have never seen anything that healthy. No blemishes, just good-looking corn. I love corn, we have it as corn on the cob. Will that harvest of corn last all year ? And our Fräulein Hannah is back, greetings to Fräulein Hannah. She, too, will make some nice young man a capable Haus Frau.😃 Will she beat you to it, Giselle ? Nice song at the end about fear and love, you all need to have a closer look at it. I can see in it what your colony seems to be missing, but then I could be wrong. Your preservation method is spot on, just loving it. Is there anything else that needs to be harvested before Winter. Do you have Brussels sprouts ? That used to be the last Vegetable to be harvested. I remember as a klana buab we already had snow and ice covering the plants, I love brussels sprouts. So tasty.     When corn is in season, here in Pennsylvania, we always buy a dozen ears at our local farm stand. We boil a full dozen. Whatever isn't eaten at dinner is cooled, cut off the cob, and frozen for winter meals.

    I love how you how you have a "pecking order" very similar to monasteries. For example, the 3 youngest girls start the jar washing. We par boiled the cobs and then sliced off and then freeze ours in bags. Sometimes I thought it would never end!

    I grew up in a family of 10. My mother canned green beans in those large half gallon jars. She usually blanched the corn in boiling water, then put it in ice water before cutting it off the cob and packaging it for the freezer. I enjoyed watching your method.

    Beautiful corn, interesting process but I can’t eat corn it is hard to digest. Not good for IBS, but I love it right off the cob barbecued in the husk. Try it next time.
