So they explained this last season, but it's explained better in the manga. Genya has the ability to temporarily turn into a demon and gain passive regen by consuming demons. His strength and regen get better the stronger the demon he eats. He has special digestive organs and jaw strength that allow for the transformation. In the demon slayer world, this is a rare ability you have to be born with to allow for this. While never outright said, I've always interpreted this ability as a rare genetic mutation. Demons have been around for over 1000 years, so it makes sense that the human body would try to adapt to demons. Wanted to clear this up before we continue in the story because they'll expect you to know this
