What did your parents prepare for grill party 2 decades ago?
grilling over a charcoal fire was my parents speciality. So as a kid, we ate really well. Pork souvlaki. Lemon Oregano Chicken. Sheftalias (Cypriot Sausages). Greek marinated skirt steaks. Plus frankfurters and hamburgers for the little kids.
A friend in my hometown, use to have a Pigroast in the summer. Not really a barbeque use to rent the roaster.My favorite was the stuffing similar to are Thankgiving bread stuffing but a little different. Was prepared and stuffed by the farmer.

Moving here from the US we have definitely had to change our idea of what a grill party is, but have been amazed at the selection of ready to go on the grill fresh meat available in the grocery store

Depending on the Grill (to be specific a so called Schwenkgrill; that is a grill hanging on a chain from a tripod over a flame pit) Stockbrot was also a necessity for children (a raw dough that gets wrapped around freshly cut twigs and baked by holding it over the fire) so they had something to do and eat while waiting for the fire to burn down to ambers and potatoes wrapped in aluminium foil with butter placed into the ambers are also very common at a German Grillabend

Honestly, that looks much like how we have a grill party, Pork steaks, Beef Steaks, Bratwurst.......I can't say I have had the pork belly the way it was cooked up but we grill or smoke a whole pork belly, cut it into cubes and make burnt ends out of them, it is like eating pork candy. The salads all looked familiar. We eat lots of potato salad, coleslaw, and pasta salads. Spices might be a little different. I made some 2" thick (bone in) pork chops in the smoker awhile back, I brined them for 2 days (sugar, water, salt and spices), wiped them dry and put a good rub on them, and glazed them just before they were ready to take off the smoker. I wish we could meet in the middle and have a big American/German Barbecue. I would love to try the German style of almost everything. I bet you would love ours. I have a big beef brisket in the freezer, if I do it up before the snow flies, I will send you some pictures. Now I am hungry again and it is bed time. Thanks Marta. Thank you! I thought it was time to get creative and learn something new:) Beefsteak wouldn't be typical back then, now everything is available, so we do beef steaks as well. American/German barbecue would be excellent, you are right. Actually American BBQ trip has been on my travel list for a while now. I hope that we can travel soon again. I can not wait to get the beef brisket pictures, and the pork belly burnt ends look insanely good:) He didn't soak the wood chips in the water though before smoking. Is this normal?
And another question, because I am not sure if I get it right, in US BBQ party would mean that somebody is smoking and grill party that there will be grilled meat and sausages. Or do you say BBQ to BBQ and grilling? (I just want to use those term correctly when talking to people;)) Here in Germany it would make a difference.
@@cooking-the-world Some people do, some don't. I use wood chunks and I never soak them. It seems like it smolders more when you soak them. I used to soak the chips when I had an electric smoker. I think the natural smoke off the wood is much better than smoldering wood....but that is just my opinion.
@@cooking-the-world Both, I usually smoke my steaks until they get to about 120 internal, then I sear them on the fire. You can smoke on a grill if you set it up right. I have a stick burner and a pellet smoker but sometimes I just put a couple chunks of hickory or apple wood across the lump charcoal in my grill. Just depends how long it takes to smoke. A brisket would probably be on the stick burner or the pellet smoker because it would take 12-16 hours. I usually pull the brisket out when it gets to 205 internal. So yes, there is both BBQ and Smoking.
Thank you for your our insightful video.. smoking meat has an indigenous aboriginal tradition here in the americas before the european conquest.. american barbeque is based on native cooking traditions... The word bbq itself - barbacoatl is derived from this..

I love the new intro, Marta :)) I have yet to come across a German food that isn’t appealing. I remember growing up in the Philippines 20 years ago when you say bbq, it usually is only marinated pork (soy sauce, vinegar, sugar, salt, pepper, ketchup & curry powder (optional)) in a skewer eaten by itself. If however, you want to make a meal out of it, it’ll be served with rice, sauce (vinegar concoction) and vegetable dish of choice. This might still stand in some places in the Philippines or not. It’s been a long time since I went back
No potato salads? Oh dear. But the marinade sounds delicious and vinegar as an ingredient is very surprising for me. I would be interested to try such a skewer, do you have a link with similar recipe? Now I am curious!:)

@@cooking-the-world hi Marta. No link, but whenever we do it here now we stick to those above. No certain measurements except soy to vinegar ratio, it’ll then be 2:1 (2 tbsp soy, 1 tbsp vinegar). We often substitute sugar with Sprite too. If you happen to make it I’d like to know what you think about it. And no potato salad 😂 only our American guests would look for southwestern-style that you buy pre-made from the store and canned pork and beans and coleslaw

I found an interesting thing that Taiwan’s 🇹🇼 people have a traditional moon festival in autumn, people get back home , family’s members get together, just having moon cakes and watching moon scene in the sky, similar to mainland China 🇨🇳 people doing; but around recently 25 years, they would get out the house to grill meat, sausages, sea foods, vegetables, etc; maybe at yards, aside streets or even close the whole street to do it for ten thousands people, smoke getting whole street, it’s looked splendidly, fantastic.

you missed most important side dish for the grill party- cold beer. Food looks really good especially the skewers.
Yes! Thats exactly what the parents would serve us two decades ago! :)
My parents were both born in Europe, so they had no problem with us drinking beer and wine when we were kids. Unfortunately when we out in public having family outings, other parents frowned on the idea of 10 year olds drinking beer.
All Italian and Spanish and Greek children get a small glass of wine cut with plenty of water, just so that they can toast the rest of the family and guests!
the only thing my Greek parents watered down was the ouzo. Which I didn't care for because I didn't like licoirce taste.
You can´t grill a beer , then it´s not cold anymore.
Rattlesnake bratwurst is very good but I doubt you have that in Germany. There is a German Deli here in Colorado that makes their own brats with Rattlesnake meat. Sehr lecker
I have never heard of it! I guess I will need to go to Colorado to try it. Thankfully we have so many other Bratwursts here in Germany!:)

We had hot dog's, Polish Sausage Bratwurst, Chicken, Hamburgers, ribs, Potato salad ,Spaghetti ,Baked Beans, Coleslaw, sweet potato pies Homemade Ice cream, and Peach Cobbler

As a German, yeah, that is pretty typical, also we also like to have some sort of rips..not the American spare ribs, just simple Schälrippchen...and a good old chop (either pork or lamp). Granted, you usuall don't find them at the big parties, since that's more expensive meat, the bigger the party, the more likely that you will mostly get sausages.
A new trend is "Grillkäse" (cheese made for grilling) and putting all kind of vegetables on the grill, especially corn on the cob, but also mushrooms.
Oh we need to make Schällrippchen next year 🤩

No, smoking is very American. But grilling is huge and you won’t be disappointed with our sausages, I promise!🤩
My Mother's, Mother's, Parents came from near Stuttgart, in the middle of the nineteenth century. Therefore Mother still cooked a number of German dishes, which were handed down through her Family. Her "krautsalat" was of white cabbage, sliced as long strips, with a sauce including cider vinegar, seeds and, as I remember, milk. I hesitate to say it included egg, but the sauce was a little yellow. I do not find milk in any published recipes. Does her's represent a regional or archaic form? Common, American coleslaw may or may not include milk. Mother's was distinctly different from "coleslaw". Thanks.
Hm, Matthias Oma makes also dressing for diverse salads with milk. I think that was very common. But she doesnt use any raw egg, that’s for sure! The dressing includes juice from whole lemon, sweetener in liquid, salt, pepper and milk. I am not sure if I am helping here 😂

You nailed it! I went to about a dozen BBQs in Germany and they were all the same: charcoal in, lighter fluid on, match, grill grate on, meat on, flames everywhere, burnt to fuck on the outside, raw in the middle, everything cooked before the coals are ready, Germans asking why Americans like their food cooked this way?
After the second "German BBQ" advise, eat before you go and concentrate on the beer.
