You rinse the filter and warm up the carafe, so you shouldn't have the paper taste in your coffee. I use Melita bamboo filter which does not absorb the crema that much. It is true that some sweetness is reduced.
Jude, thanks :-) I find that no matter how much I rinse the filter, I still taste it! I have a very sensitive palate. I'm weird that way :-) I've never tried bamboo, that sounds quite interesting!
