Walk down memory lane with me as I recreate this childhood holiday favorite meal. During the holidays, as our culture encourages us to, we cooked special dishes and shared with friends and family. It was kind of a food exchange kind of thing, or better described, a potluck. So my mum would make this dish, a rice dish and definitely some fufu as well and my sister and I would be sent to certain family members and friends with baskets of food, covered with a beautiful kitchen towel or lace fabric. We would also receive various delicious dishes from other families as well and as such end up with loads of food to eat for many days. Oh the joy this brings to my heart! Happy Holidays dearest family and friends! I hope you're able to put this classic on your holiday menu.
Ingredients:
1 cup agushi
9 medium sized tomatoes
2 large onions
6 cloves of garlic
16 to 20 pieces kpakposhito (petit green chili’s)
2 tablespoons tomato paste
1 245g can Geisha Mackerel
1 340g can Exeter corned beef
⅓ cup cold pressed coconut oil
1 heaped tablespoon shrimp shrimp powder
1 teaspoon all purpose seasoning
3 large eggs
½ of a medium sized tuber of yam
Salt to taste

I don't like Egusi but I love all of the goodies you put in it!!!! All of those beautiful garlic onion and those beautiful tomatoes. The stew looked so good I would have ut and the yams alone!!!

I do cook my egussi like you did sis and these days I cook in the microwave to achieve the lumps. That soup is so yummy and I'll have it with yam too, my mom usually cooks yam on Christmas and Easter back in the day😂😂😂. If you want clamps, after blending the egusi, put hot in the egusi and start turning it with a wooden spoon. Put hot water slowly . when i do it, the oil will come out from the egusi . it will be a hard dough, then put it in hot boiling water with salt before adding tomatoes. You will have clamps, but i like your simple way too. You can check how to cook mbika on RUclips conglese style.
