  • Kudra mafrooka is a Sudanese blended jute mallow stew.
    INGREDIENTS LIST:
    Frozen Molokhia (2 x 400g)
    ¾ - 1 teaspoon kombo (lye water)
    1kg lamb (or your choice of red meat)
    1 small onion
    1 tablespoon cooking oil
    1 cinnamon stick
    1 ½ tablespoons vegeta
    1 tablespoon garlic paste
    2 teaspoons coriander powder
    2 teaspoons cumin powder
    Black pepper to taste
    Salt to taste
    HOW MY FAMILY & I EAT THIS: We have this stew with kisra, asida or injera.

    Thanks for this. This seems like the best molokhia video I’ve seen so far. We cook it differently where I’m from but my partner cooks it similar to yours. Thanks for making this seamless. But more importantly, thanks for being so polite and kind in your way of teaching. You’ve gained a fan.

    Can you show me how to prepare the flower mix to make it sour like I want to doit for 7 people how many up of yellow flower and how many all purpose flower and water I should use . I try to make it but it turns out like flat bread please help me this is my husband favorite he is from south Sudan

    How much do we use if its fresh leaf?

      Jute leaves shrink like spinach once cooked so it’s difficult to determine how much is needed. It’s also hard to say because the bunch may be big or small.
      The next time I see it at the stores, I’ll buy some to determine roughly how much is needed. If I do, I’ll share the process in here.
