Will definitely be trying some of these discard recipes. I've had my sourdough going for over 3 weeks now! I still cannot believe it started from my old sourdough back in March 2021! I had dehydrated some and just stuck it in the freezer. Now it's bubbly, delicious and able to make all the things.

The best use for discard is "sourdough spice". I freeze dry it and subsequently grind it into a powder in my food processor. It's very brittle and turns to a powder in a couple of seconds. Now you have a way to impart the same sourdough character and you don't even need to use a sourdough starter!
I haven’t ever done sourdough because of the thought of being tied to so many strict rules. By watching my first Fermenting February, I have gained so much confidence and knowledge to give SD a try. I’m on day 6. Thanks to everyone!

Hi Anna, Thank you for doing this, I ‘found’ you after watching @Suttonsdaze canuary collabs and have watched tons of your videos now. I have a question please .. I’ve never done sour dough - But then i’d never done fermentation til I watched your vids and the #fermenting February collaborations. My gardeniera seems successful YaY! However my cauliflower is soft - is this to be expected or because i pushed all of the veg down as you do with sauerkraut? Other veg appear crisp, not tried them all yet.

Cool idea to collect all the discard in a refrigerated jar so there's less pressure to use it ASAP. Also, Farmhouse on Boone is awesome, including an interview with a lady who saves a lump of sourdough in dry flour! Thought that was an awesome way to reduce the necessity for discard, but I haven't started using that method...yet...maybe.

These all look fantastic. I have been using the King Arthur sourdough pizza recipe ans it’s amazing. I also love to make sourdough pasta with my discard and farm eggs. The pasta has a beautiful gold color. ❤

I wonder if the pizza dough would have been improved by adding some flour (so it's more bread-like) for the slightly doughier texture? I've never participated in Fermented February and I can't imagine why! I love fermented foods and have been making milk kefir for going on 15 years, I'm pretty new to making sauerkraut but I love it and have begun experimenting with various additions.

I have been wanting to tear up some sour dough discard. Thank you for this! There isn't one recipe I wouldn't use! I am excited to try all of these and be so happy about not waste any discard. I am wondering if oil would make the pizza crispier instead of butter. Just thinking butter can burn, but with oil could be hotter and maybe result in the heavier crispy option? I don’t usually like chocolate chip cookies but was very excited when you added the molasses. Maybe I should omit the chips. 😇 Farmhouse on Boone has a lot of good recipes.
I never discard. I make sourdough once a week or twice a week. After I take out 50 grams of to make loaf, I then feed with 15 to 30 grams of flour and put it in the fridge. When I want to bake, I take it out of the fridge and feed it with 15 to 20 grams of flour and it doubles in about four hours and I make my loaf.
I have been making almost solely discard dishes with my sourdough. I have only made actual bread 2 times. Can’t wait to try the Dutch baby and the cheez it copy cat.

Great ideas for discard! I make the pizza frequently and have better results if I remove crust from cast iron and place on a stone for the second bake with toppings.

I love discard recipes! Don't have much in the fridge right now because I had my starter in hibernation so I'm just starting to accumulate some now.
We went from 62 yesterday to 9 with windchill. I’m so over winter (northern Wisconsin)
