do not close the lid , locking the lid , stops the food expanding, let the omelette rise and go firm. best omelette you ever eat, in five to seven minutes. just close the lid, DO NOT LOCK.

It will explode if you lock that latch. Leave the latch open.

That's not a omelette, least not the kind I like. Supposed to be more like a stuffed type deal, not just all your stuff baked into the egg.
