Thank you for making the Spekkoek today- It is called Spek=pork belly & koek= cake in Dutch. Originally the batter was divided into 2 parts. One with vanilla, and the other half with the mixed spices. So the different coloring is not from the darker bottom + the top of the cakes, but actually of the spice colored layer versus the vanilla (used to use the vanilla pod) only coloring of the 2nd layer and so you can see the different layers, not only from the top and the bottoms of the cake layers=====. But most people just rely now on the coloring of the top and the bottom of the spekkoek for division.

hi~ I'm not sure whether other bakery shop got sell or not, my area here didn't sell. I bought it from TF hypermarket. Butter is the product of milk, normally will content abit milk with it. To produce clarify butter it have more process to eliminate the milk inside the butter, so is milk-free butter. Normally use for cooking or BBQ. My English not good hope you can understand☺️

正常的,可能倒面糊的时候把空气包进去了,蛋糕在烤的时候内部的热气也会跑出来,这些都会造成鼓包,要用竹签戳洞,然后把空气压出来😇

hi~ layer cake spices is not same with 5 spices. If you can't find it then just omit it, and make the original flavor or vanilla flavor also can☺️

全蛋黄的配方水份比较少,口感会比较扎实。最传统做法还是用全蛋黄,打黄油霜的时候也不容易油水分离。改良版的加了蛋白,口感会比较松软☺️

我因为时间烤得长,每层约4到5分钟,牛油糊会让蛋白消泡,蛋糕糊最后变稀了,哪要如何控制得当,谢谢您了🙏
可以从两点下手:
第一,建议不要减糖。因为打发好的面糊要坚持很长时间不消泡,糖在这方面可以起到很好的保护作用。
第二,蛋白要打到够硬。虽然和面糊混合的时候有一点困难,可是只有这样蛋白才不容易消泡。
另外,如果天气实在太热,蛋糕在烤5分钟的同时,面糊可以暂时放进冰箱。不过千万不可以放太久,以免面糊温度太低凝固了。如果有保丽龙箱子更好,面糊放在里面绝对不融化☺️

小豪,我牛油打发了加入蛋黄的时候,到最后变成蛋花的感觉。油水分离了如何补救
油水分离了😨你用坐冰的方法来打,就是用一个大盆里面装冰块水,牛油盆隔冰水打。牛油重新凝结起来蓬发后才继续加蛋黄。如果蛋黄已经加完了,就是一样用坐冰的方法来打,可能时间会比较久一点。
好滴,我无法抢救成功。但还是勉强做了出来,吃了蛋糕口感没有那么好,卡油。😥

我猜你的软意思是很水吧,应该是融化了。还没有加鸡蛋之前,牛油加糖大概打5分钟就够了。如果牛油融化了,怎样打都不会发,先放冰箱10分钟左右,牛油有一点凝固了才打☺️
谢谢你的回复,应为我的牛油从冰箱拿出来后,放在外面太久了',很软。打了很久颜色也不会变白。但是蛋糕也做成功。还有一个问题是我的蛋糕每层大概3分钟150c 就上色了。
@@lilikwok9884 印尼千层蛋糕厉害的地方就是牛油不用很完美也可以成功~3分钟上色没问题,可能你的烤箱火力比较猛,酱烘烤时间就会缩短很多~
