How to Dry Brine and Smoke Salmon in the Lone Star Grillz Offset

Got these two filets of salmon from my local Costco and smoked them up nice using my own homemade brine, JPAP and JP Peach Sauce. Thank you so much and I hope you guys like the video.

    Looks great. What do you have the lengths of angle iron laying beside your fire management basket for? I assume for holding logs to heat up beside basket. Also, how low of a temp do you think the Lone Star could cook at? I was wondering if it could manage cold smoking?

      Before I had the Fire Management Basket I would use those small lengths of angle iron to keep my splits of wood a little elevated in order to burn a little better. That’s a good question about the cold smoking, not sure, haven’t tried. I would think it be a little tough. I think the lowest I’ve used the smoker is at 220 F. You could probably get one of those little stainless steel tubes loaded with wood pellets and use that as a smoke generator. But good questions, appreciate your watching.

      Thanks Mark, appreciate the compliment, I would probably cut the salt in half and dont brine for more than 4 hours. Mine was just a little bit salty. You can also add molasses to the brine if you like it on the sweeter side. thanks again.

      I used oak. Smoke flavor was good. Just a little bit salty. I think I brined it to long.

      You may want to cut the salt to half of what I used. I may have brined it to long as well. I would not brine for more than four hours. If you want it on the sweet side, add some molasses to it. Thanks again

    Do you have a recipe for bake beans or Mac n cheese on the LSG?

      Go easy with the salt, mine came out a little salty. Probably cause I let it brine to long. No more than 4 hours in the brine and rinse real good. Probably cut the salt in half and you should be ok. Thanks again

      My wife has a real good Mac and cheese recipe. Real good too when smoked. I’ll see if I can get it from her.

    How long did the salmon take to come up to 135?

      Thanks for watching Derek, I wanna say to get it to 135 It took roughly 45 min to an hour, running the smoker at about 250 to 275. thanks again for watching and appreciate the question.
