  • Moist and fluffy marble cake made from scratch doesn’t have to be complicated. You all have asked me many times for an easy marble cake recipe that doesn't require two cake recipes. Well after much testing, I finally have the PERFECT marble cake recipe for you!

    MARBLE CAKE RECIPE ►
    16 ounces (454 g) cake flour
    16 ounces (454 g) granulated sugar
    1 tsp salt
    1 Tablespoon baking powder
    1 teaspoon baking soda
    4 large eggs room temperature
    5 ounces (142 g) vegetable oil
    14 ounces (397 g) buttermilk room temperature or slightly warm
    8 ounces (227 g) butter unsalted and softened
    2 teaspoon vanilla
    1/2 teaspoon almond extract
    1 ounce (29 g) cocoa powder dutch or natural
    3 ounces (85 g) hot water
    1 Tablespoon cocoa powder for dusting
    GANACHE FROSTING ►
    16 ounces semi-sweet chocolate
    16 ounces heavy whipping cream
    1/4 teaspoon salt
    1 teaspoon vanilla extract
    GANACHE DRIP ►
    6 ounces semi-sweet chocolate
    4 ounces heavy whipping cream

    WINNER!! Just made this recipe and it turned out wonderful! The taste is the perfect balance of flavors-not too chocolatey - just right for marble! Texture was on point as well! My entire family raved about it! Don't doubt in making this recipe!

    This recipe is perfect.
    I made it today for my niece's birthday. It came out perfectly and it was so delicious. So moist and soft. I made it without the topping.
    I've put all of the batter in one cake pan and had to bake it for 50-55min.
    Thank you for this recipe. The technique works really well.

    I tried the reverse creaming method when making your white velvet cake and I’ll tell you, I’ll never go back to the old method again, that cake was superb. Keep up with the great work!

      Daniella Lincks I tried the reverse creaming method. The texture reminds me of carrot cake. I was not sure I liked that texture for vanilla cake.

      Appaddict01, that’s so strange! I got a really fluffy and velvety texture, and I even used a little hand mixer. I’m more of a cook than a baker and as much as it pained me I followed the recipe to the gram and maybe that helped. However, I used the reverse creaming method when making her white velvet cake, maybe the chocolate changes the texture. Perhaps contact Liz and ask her for help.

    This cake is super tender, moist and delicious, in the country I work in, there is no cake flour, I just sift batches of all purpose 4- 5 times, and it never fails me when a recipe calls for cake flour (recipe was from an old American Good Housekeeping)

    I have a vanilla cake recipe that I wanted to make into a marble cake. I used the equivalent amount of cocoa and hot water, and it came out just as soft as always, maybe even softer. I also never thought of adding almond extract, but I did because you said it was traditional. Great addition, but I only added a little. Thank you! I always learn so much from your videos.

    I'm so glad I found this recipe. My childhood memories of marble cake always had a hint of almond flavor. I would prefer to bake this in a 9x13 or a bundt pan as I don't have 9" rounds. I hope I can gauge the baking time.😟

    Hi, Liz, you indicate in the video you put a layer of buttercream. Not sure if you meant ganache? Or if you put buttercream, layer of ganache and placed it in the fridge to set?

    Made it for Mother's day this pst weekend. Oh. My. Goodness. Everyone cannot stop commenting on the crumb-light, fluffy, delicate. Took some to a friend who said after she ate the piece, she gathered and smushed together all the crumbs and ate that, too. Not too sweet, perfect texture. Did I mention PERFECT TEXTURE?

    Wow thank you sooo much dear, Its only because u gave the recipe with grams. Otherwise I am so stuck in google translating ounces to grams . And when I try google translation ounce to grams and made the cake recipe of urs it came out like almost most freaking density bread.. I was so worried that i am never going to bake .

    Hi, I love your recipes! I am planning to make a Neapolitan cake and thought of using this recipe for the cake since it is 2/3rds there already. My question is... How would you do the strawbery part? Compote or freeze dried strawberries? And how much?

      I know it’s quite a long time since you’ve asked this but I had the idea to use Liz’s strawberry purée recipe in place of the cocoa/milk mixture then proceed. You could probably just seperate the batter in 3 and go from there! Hopefully you figured something out 💕

    Hello! The recipe converter indicates that 12 cups of batter is required if you select three pans of 8” rounds. However, the website recipe and the RUclips video notes the yield is 9 cups of batter for three 8 inch rounds.
    Which recipe should I follow for three 8” rounds? 9 cups of batter or 12 cups?

      Ah wait…Never mind. She used 4 eggs for 3 8-inch pans in this video. So follow the recipe that calls for 4 eggs to make the same amount🙃

    Hi Liz question? You used butter milk in this vanilla recipe but your vanilla recipe used reg milk, what’s the difference and why? And can I mix sprinkles or Oreos in the regular vanilla cake. Thank you.

    1. Can you double the recipe? If so, just double up every ingredient or it's a different story for baking powder and baking soda?
    2. Generally speaking, can any all purpose flour recipe be turned into reverse creaming by substituting it with cake flour? And if so, what's the substitute formula?
    3. On your website I see at the bottom section you can choose number of pans and it gives you the batter needed in cups. But, it doesn't change the recipe ingredients accordingly to show me the equivalent cups. Am I missing something or that's the only way its formulated?
    4. I tried this recipe. Taste was great! But, didn't get those gorgeous tall levels you have!! Any tips??! Mine are a lot smaller height wise!
    5. Would be great if cake servings would be included in all your recipes and giving us the height of each layer and amount of frosting to put on. Like in this video you mentioned you aim for 1/4 inch of ganache.
    So, for this cake for example, what are the servings for wedding or dessert? I noticed you have the calories per serving on your blog, but, doesbt mention what is the serving size.
    6. How good are cake flour cakes for stacking and fillings?!
    7. Can you put syrup on each layer then the filling or frosting or it would collapse or no need to start with?
    8. No cake strips?! And you got those beautiful layers?! Any tips of when to use and when not to use the strips?

    Thanks for the valuable information. I'm an older guy that always wanted to learn to make cakes just for the joy that it brings others. Your way of explaining is just what I needed. I want to specialize in marble cakes but now You've got me thinking about German chocolates and the like. By the way, I like that apron you're wearing. LOL!
