Milk Chocolate:
Melting 40 to 45 Celsius

Reheat 29 Celsius
White Chocolate:
Melting 40 to 45 Celsius
Cooling 26 Celsius
Reheat 28 Celsius

Once over heated the same chocolate we can't fix , use that chocolate for brownie or any ganache then strain it .
Don't heat too much sister , just 50 to 55 celcius dark chocolate , more heating is not good , then cool down rapidly this thing also needs to follow
