I made this tonight and it was yummy! We are watching our carbs so I substituted quinoa. One cup was a little too much, so next time I think I’ll only add 3/4 cup. And definitely will make it again!!

Hi Sara Lynn, Try out other Hungarian recipes too if you're craving comfort food, such as paprika chicken, hortobágyi palacsinta (pancakes from Hortobágy) - where you can use up the remaining paprika chicken as a stuffing, or my favorite: potato casserole or layered potato (the french way - without meat. This recipe is close to the real one, except you cook the potatoes with the skin on and then cut it into 8mm slices, plus add a lot of shredded cheese between the layers and on top: www.splendidtable.org/story/2015/11/24/hungarian-potato-and-egg-casserole

I use chili powder in my stuffed peppers over Italian seasoning and Swiss cheese too. Soooo yummy!! Probably going to try this soup soon since we just got some peppers the other day 🙂

For those of you near a Lidl, they have a really great (and super cheap) veggie ground alternative that has a really beautiful rich mushroomy flavor. The second ingredient is mushrooms. It does use soy, so like... watch out for that if that's a concern. But it's so delicious and it would def go so so well with these flavors

Fun fact in my country we stuff the peppers with codfish and bechamel sauce, and we stuff roasted peppers instead of fresh ones, so different!
