My fish was pretty thick I went 8 mins not high heat just turned going 5 min on meat side. I did it back wards skin side down my next piece I will start meat side down.

What creates the "black" in "blackened" is the "BUTTER & SEASONINGS". Dip the fish in real butter, then place in a piping hot cast iron pan.
