Recipe
Ingredients:
2 medium potatoes (cubed)
1 large eggplant (cubed)
1 onion (finely chopped)
2 tomatoes (finely chopped)
2 green chilies (slit)
1 tsp ginger-garlic paste
1 tsp cumin seeds
1 tsp red chili powder
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp garam masala
Salt to taste
Fresh coriander leaves for garnish
3 tbsp oil
Water as needed
Instructions:
1. Heat oil in a pan and add cumin seeds. Let them splutter.
2. Add chopped onions and sauté until golden brown.
3. Add ginger-garlic paste and cook for a minute.
4. Stir in chopped tomatoes, red chili powder, turmeric powder, coriander powder, and salt. Cook until the oil separates from the masala.
5. Add potatoes and cook for 5 minutes, stirring occasionally.
6. Add the eggplant, mix well, and cook for another 5 minutes.
7. Add about 1/2 cup of water, cover, and let it simmer until the potatoes and eggplant are tender (about 15-20 minutes).
8. Sprinkle garam masala and garnish with fresh coriander leaves.
9. Serve hot with rice or roti.
