Glad you enjoyed the video. For Redwork, I would just use the default stitch length, unless it is a very simple shape with no tight corners, then you could lengthen the stitch slightly. You will probably use the blackwork run tool to eliminate jump stitches. This would stitch over everything twice so would give a bolder look.
