I build server on my localhost/laptop and each time I restart the SSAS from services or I restart my computer, the deployed model stored in the SSAS Server lost and I should redeployed from the Visual Studio Project. is it possible to make deployed file stay in SSAS server?
Build will ensure there is no issues in your code or relationship. Deploy will save all your changes in the server. Process will read from source and update in server

What happens if my datasource is being updated every day? Does that reflect automatically in my SSAS and SSRS or do I manually need to update everyday?

Once you deploy it should not deleted In SSAS. Not sure why it is happening in your case

Not sure. Try with sample data or restrict the data in views.
