I'm experiencing the same problem, sent twice the apple watch 5 series to "repair", and the Apple Repair center has returned both times saying they could not find the problem, even I uploaded multiple videos showing the problem.
I’m so sorry! I’m glad to know it’s not just me. I ended up taking this watch back and getting a brand new one because it happened twice within a week of buying it. Now it’s been 2.5 months with no issues, however today it happened again on my new watch. 😭😭 I called support and she had me unpair and repair... this worked, but who knows if it will last. That’s what I did before and it did it again 3 days later. I am not happy about having to unpair and repair every few days if that’s the case. By the way, I turned off “zoom enabled” and it no longer says that now but it kept flashing the Apple logo whenever I tried to tap any apps. Ugh. Try unpairing and repairing and praying!
