Всыпать 20 г муки, перемешать до однородной консистенции. 180 мл молока на слабом огне довести до кипения, не кипятить. Влить тремя порциями в смесь, после каждой порции перемешивая. Смесь поставить на средний или слабый огонь, заварить, непрерывно помешивая. Когда пойдет кипение, мешать очень быстро, не допустить пригорания. Снять с огня, добавить ванилин и накрыть пленкой в контакт, поставить на 30 мин на охлаждение. Несоленым сливочным маслом смазать изнутри формы (формы объемом 250 и 430 мл), посыпать сахаром так, чтобы сахар закрепился на стенках формы за счет масла. Взбить миксером охлаждённую заварную. 3 белка взбить с 35 г сахара, всыпая в три приема. Белковую массу соединить с основной смесью, хорошо перемешать. Выпекать при 200 градусах 15 мин. Присыпать сахарной пудрой. Приятного аппетита!!👍

Its a mixing whisk. You want a balloon whisk to make whipped cream or meringue. With a balloon whisk you cut back on time and don't risk cream turning to butter .

Usually souffles are served as soon as you take them out of the oven because they start to deflate within minutes.
