My family kept complaining that the cornbread was too crumbly and dry, so I too added 1 can of cream of corn, and about 1/2 to 1 cup of sour cream. It makes it moist and holds together and no one complaines any more! Sometimes, I'll even add a tsp to 1 tsb of sugar added to make it sweet cornbread!

I just made the Chicken Taco Soup. I made a couple of changes to use what I had in my pantry. Instead of water and bullion, I dumped in a 14.5 oz can of chicken broth. My can of diced tomatoes were garlic and olive oil. Since I had a can of corn, I used half in the muffins, and threw the other half in the soup. This soup is so good and obviously flexible. I was really impressed! It was the perfect dinner on a cold, snowy evening. I will make it again. 😋
